I Killed Dinner (OR: I Found A Way To Get Off Tortillas)

I.love.Mexican.food.  Period.

I was making Pampered Chef's Beef Enchilada Bake . . . it's easy.  It's so easy you could be BLIND and make it.

So, I messed up.  Keep in mind I buy ground sirloin in about a two pound package.
Here's the recipe:  brown one pound ground beef with some salt and about 2Tbspn of Southwestern Seasoning Mix.  Once browned, stir in one can enchilada sauce (you pick the heat), about 3/4 cup of chunky salsa (you pick the heat), and 3/4 cup of water.  Let it simmer a few minutes, then remove from heat.

On the side, have 1 Cup shredded Mont/Jack cheese.

Cut up 12 corn tortillas in 1-inch strips.  Take half and layer on the bottom of a deep dish baker.  Add half the meat mixture (will seem like too much liquid, but the tortillas absorb it nicely).  Add half the cheese.  Layer the rest of the tortillas, then meat, then cheese.  Bake in microwave 3-5 minutes.  Done.  Eat.  Top with whatever you like (we use sour cream, but tomatoes, guac, green onions). . .

So how did I muss it up?

I was layering on the second layer of BLUE-tinted (as in mold, not blue chip) corn tortillas before I LOOKED at what I was doing.  OY VEY!!!  Disgusting.  I almost tossed my cookies right then and there . . . and trust me, I had some cookies to toss up:  I baked chocolate chocolate mint chip cookies today and scarfed two while cooking the meat.

Corn dog nibblets it is then.  Shit.

Will have to check my tortillas first to see what color they are before I attempt your recipe. Been gone for a week, cleaned out the fridge before I left, but you never know what may have happened in there while I was gone.
They certainly sound good enough to try if I have the fresh ingredients.
Loved Hawaii, next time we will spend a couple of days in Honolulu so we can go to Pearl Harbor first.
